Glycosaminoglycans (GAGs) are chains of unbranched polysaccharides, absorbing up to 50 cm³ per gram of dry weight. Due to their polarity, the negatively charged sugar chains of PG/GAG can retain water and exchange ions, thereby maintaining the isoionic, isotonic, and isosmotic balance of the matrix. They participate in metabolic processes and cellular nutrition, and also have a filtering effect on matrix molecules.
